A blend of Cab Sauv, Cab Franc, and Merlot. Deep purple in color, it offers aromas of rosemary and violets slowly giving way to dark fruits. The palate is laced with blackberry, dark cherry, currant, and Fellenburg plum and slowly reveals earthier notes of black olive brine, sage, star anise and cocoa. In its youth it would make an excellent accompaniment to gamey meats, or beef, but will soften with age, and as time will develop a predilection for lighter meats and red sauces.
